Crockpot Chicken Gyros Recipe
Ingredients: (serves 3-4, I recommend doubling for leftovers!)
1 lb boneless, skinless chicken breast
2 tbsp extra virgin olive oil
2-3 garlic cloves
1 tbsp oregano
2 tsp salt
1 tsp pepper
1/2 cup water
1/4 cup lemon juice
3 tbsp red wine vinegar
Mix all of these ingredients in your crockpot! Cook on low for 6-8 hours or high for 3.5-4 hours. Shred chicken in the crockpot using two forks (this is what I do!) and let them sit in the juice for another 30 minutes on WARM. Serve however you’d like! We usually serve as an open plate with whole wheat pita, diced tomatoes, cucumber, mixed greens and tzatziki sauce.
Top with feta and enjoy!
