Liz's Favorite Chopped Salad

I love to share quick snapshots of the lunches I make at home on my IG stories. Whether it’s a quick tapas plate of my favorite snacks, turkey lettuce wraps or breakfast bowls, it’s fun to get creative when it comes to my everyday lunch! First up I’m going to share the “recipe” for my chopped salad that really has no recipe at all because it consists of anything in your fridge. It’s inspired by one of my favorite Italian chopped salads and my friend Natalie’s amazing recipes
Italian-Inspired Chopped Salad
green olives
pepperoncini peppers
mozzarella cheese

lemon vinaigrette:
juice of 2 lemons
2-3 tbsp extra virgin olive oil (taste for preference!)
salt + pepper

The key to making this salad delicious is to chop everything the same size! I also like to top with fresh cracked pepper. There is no real method to creating this salad, just throw it together and enjoy. We love eating this for lunch or a light dinner! If you want to eat some for leftovers, just make sure to dress the salads individually so it doesn’t get soggy. Yum!

Here are a few of my favorite ingredients:
cottage cheese with lemon juice and red pepper flakes
carrots/cucumbers with hummus + TJ’s zhoug dip
rice crackers
sliced salami
turkey wraps (with honey mustard + TJ’s everything but the bagel seasoning)
hard boiled eggs with TJ’s chili lime seasoning
Lettuce wraps:
romaine lettuce
Plainville low sodium turkey (fresh from the deli at Whole Foods)
honey mustard
TJ’s everything but the bagel seasoning
Almond butter toast: 
this is a great post-workout late breakfast/lunch!

almond butter
sliced bananas
honey drizzle
chia seeds
