Trust me you guys, these are good. I don’t remember where I found this recipe {probably Pinterest} but I can’t really take credit for it because there are a million recipes out there on the internets that tell you how to make a similar variation. I honestly don’t measure my ingredients very well and always change it up {sometimes I add TJ’s Cookie Butter instead of peanut butter – yum!} so I used this recipe as a good base. Anyways, I make these almost weekly – they are the perfect snack when you’re on the go and pack a lot of protein and fiber to keep you full for a couple of hours. Plus, they basically taste like a cookie!
Ingredients:
1 cup of old fashioned oats
1/2 cup flaxseed {you can also use ground flax seed but I like the extra crunch!}
2/3 cups toasted coconut
1/2 cup mini semi-sweet chocolate chips
1/2 cup smooth all-natural peanut butter {you could also substitute this for any kind of nut butter as long as it is smooth}
1/2 cup honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
Mix all ingredients in a large bowl until evenly coated. Cover the bowl and place it in the refrigerator for 30 minutes until it becomes cool and all of the ingredients hold together.
Remove from the refrigerator and roll {more like squeeze} into small balls. Mine are kind of all different but it should yield 2-3 dozen depending on size {I recommend 1 inch balls}. I find the ingredients hold better in a ball when my hands are wet, so I usually wet them in warm water before rolling. Keep in refrigerator in a Ziploc bag or air tight container for up to a week! I usually allow 2 per serving.
