Spring Jalapeño Herb Sauce


"I’m a huge fan of a good herby sauce to punch up a meal. There are so many combinations that are delish but I recently stumbled upon a FAVE. I think I made this recipe 3x in one week to have with our meat, our eggs, french fries, fish, shrimp, mixed with hummus for veggies and I bet it would even be good with pasta!" Xx, Liz.
If you don’t have a dedicated food processor a good blender can work just as well. When it comes to these recipes it’s hard to give you specific ingredient amounts. Taste as you go and add additional seasoning as needed!
Spring Jalapeño Herby Sauce Recipe
Ingredients:
1 bunch of cilantro
1 jalapeño roughly chopped
1/4 white onion roughly chopped
2 garlic cloves
zest of one lemon
juice of one lemon
2 tbsp extra virgin olive oil
salt + pepper
red pepper flakes
In the food processor, blend everything together! Start with 2 tbsp of extra virgin olive oil and continue to add more based on the consistency you prefer! I lean towards a pesto consistency. If you feel like it gets too liquid, add the stems of the cilantro to thicken! You can also add more salt if it tastes to lemon-y for your liking and red pepper flakes based on your heat preference.
Serve with grilled chicken, breaded chicken, steak, shrimp, salmon, roasted potatoes or starchy veggies, scrambled eggs – the list goes on. Trust us, you will be making this all summer!
